Alfredo Chicken LasagnaThere are only a handful of foods that my entire family can agree on. On the top of that approval list resides my dear friend, pasta. So versatile. Since this is such a repeat staple in my rotation, I sometimes find it hard to keep it interesting, yet simple enough to please everybody.

Enter Alfredo Chicken Lasagna Roll Ups. I admit, although the recipe looked pretty tasty, I didn’t have high hopes for it. Seemed like just a lot of everyday flavors combined into one dish. Yawn.

But wow.  The hubby declared it “delicious”!  While in most homes I’m sure that’s a rather stock remark. In mine, it translates into the ever elusive Home…Run!

I should also mention that, like most of the meals I prepare, I cannot take credit for their creation. This little gem was picked up from Table for Seven.

I’ve re-created the sauce HERE, so be sure to give this one a go. You won’t be sorry!

  1. Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick spray. Boil lasagna noodles until al dente. (if making your own sauce, reserve one cup pasta water).
  2. Lay out noodles on wax so.
  3. Spoon 2 tablespoons of sauce over each noodle
  4. Time to add the chicken. If you have unseasoned chicken like mine (boiled), sprinkle with 1 tsp of garlic powder and mix into chicken.
  5. Now, go ahead and cover each noodle with the chicken.
  6. Now top off each noodle with cheese (and spinach if you'd like)
  7. Fold over noodle by half.
  8. Then again
  9. Add them to your prepared dish. Top with remaining sauce and cheese
  10. Bake uncovered for 30 minutes.

Simple, right? I think so. Serve this with a spinach salad and garlic bread and you'll have one happy family!
